Why is freeze-drying a superior preservation method?

Most bone broths on the market are refrigerated or frozen which results in a very limited shelf life. Freeze-drying removes more moisture (98-99%) from the broth so it can be preserved for up to 25 years at optimal temperature without the need for preservatives or additives to maintain freshness!
